You’ve got to try this Cold Potato Salad recipe. It is super simple to make and was inspired by our Texas Adventure over Spring Break!

If you have never been to Texas, you must put it on your Bucket List and cross it off quickly! The people and the hospitality is unlike anything I have ever experienced. I honestly didn’t want to come back to Cincinnati!
Between the good food, the remarkable communities that have been built and the outreach of the people it’s no reason why a handful of cities in Texas are the quickest growing towns in the United States.
We started our journey in Austin. Our first full day was on a Sunday and we spent the morning and afternoon in a quaint little town called Gruene, Texas. It’s pronounced Green!
We stopped and took several pictures along the way. There was this huge breezeway that we found when we first arrived and thought the wood barn would make a great backdrop for a picture 😉 We continued our journey around town {which I’ll have more on in the coming weeks, so stay tuned!}, snapped some more pictures and made our way to The Gristmill.
When we arrived the waitress was a joy! I was there as a “writer” and so the menu was pretty open. I had told her to bring us a sample of their most popular dishes…..
Instead, she brought us out FULL plates of their BEST dishes! As you can see the Cold Potato Salad is in the small bowl by itself on the bottom of the image above. It was served solo as a side from one of these amazing entrees.
At the time, the Cold Potato Salad got passed over. I did take a couple nibbles and remember loving the flavor. Plus, how easy it would be to create it. I mean after all it is a pretty simple recipe!
Now my images of my Cold Potato Salad need to be reshot, but, I wanted to get it to you ASAP as it’s a PERFECT spring and summer recipe to enjoy with family and is one of those recipes that is perfect for feeding a crowd. Plus, it can be doubled or tripled easily to keep the costs down.
I hadn’t been home an entire 24 hours and I had already created this recipe for our Sunday Dinner. I knew how I wanted to recreate the Gristmill Cold Potato Salad recipe. I also knew it needed lots of pepper. So, don’t be afraid to season as you go. It’s honestly the best way as we each have our own tastes. Throw in as much or as little ingredients as you wish. Just like all my recipes here at MyHeavenlyRecipes.com they are a guide and can be adjusted as needed!

Cold Potato Salad
Ingredients
- 6 medium red potatoes diced and cooked til tender
- 6 TBSP Mayo
- 1 TBSP Milk
- 2 Slices of Bacon chopped
- 4 TBSP Green Onion chopped
- 2 TBSP Black Pepper
- 1 TBSP Sea Salt
Instructions
- Dry red potatoes and allow to cool.
- Mix in mayo, bacon, green onion, pepper and salt, stir.
- Taste and adjust flavors accordingly.
- Refrigerate for a minimum of 30 minutes.
- Serve cold and enjoy!
