There are many times when I like to take credit for things that are seemingly easy and simple. Then throw in the fact that I look like a “hero” to my children for creating things like these Unicorn Cookie Bars and it’s all the reason to continue to be a Mom on the days when I just don’t think I can take anymore.
I ran across the Unicorn Bars from Cookies and Cups. I thought this was a genius idea! As I’m still on this damn knee scooter and recovering from foot surgery I just can’t be in the kitchen for far too long. However, I had to come up with a couple of quick & easy recipes for a party that we were having!

Not to mention I can’t really go a lot of places because this Momma isn’t crutching up the stairs and the current cold weather doesn’t play nice with the pain, nor does the snow! So I choose to stay at home for the ease…however, I do make Jas take me out when I’m about to flip my lid…
How to make Unicorn Dessert Cookie Bars
When I saw the original recipe, I felt like they needed “my touch”. So I added a cup of Nestle White Chocolate Chips {I needed something a little extra sweet cause Mother Nature said so!} and added a teaspoon of Dunkin Donuts Vanilla Cupcake coffee to the frosting recipe.

We had a Hot Cocoa & Coffee Bar along side the Unicorn Cookie Bars at an afternoon party this past weekend.
All of our friends LOVED LOVED LOVED the coffee. Now I had one friend who is a little…obsessed with the Dunkin’ Donuts Pumpkin Spice. He was devastated at the fact that he can no longer head to the drive thru and order one. He just doesn’t get the world SEASONAL!
Anyhow. He smelled the bag of coffee I sent home with him and his wife… like seriously kept smelling the bag! They ended up going home to make a pot, and one again the next morning. If you know this dude you know he’s SUPER picky and hard to please, so this is kinda a big deal!

Unicorn Dessert Cookie Bars
Ingredients
For the Cookie Bars
- 1 cup butter melted
- 1½ cups granulated sugar
- 2 teaspoons vanilla
- 3 eggs
- ½ teaspoon kosher salt
- 2 cups all purpose flour
- 1 cup Nestle Semi Sweet Morsels
- ½ cup sprinkles
For the Frosting:
- ½ cup butter room temperature
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2-3 tablespoons Dunkin Donuts Vanilla Cupcake Coffee or milk
- pink food coloring
- sprinkles for garnish
Instructions
- Preheat the oven to 350°F.
- Spray a 9x13 baking dish with nonstick spray. Set aside.
- In a large bowl whisk together the butter and sugar. Add in the vanilla, eggs and salt and whisk until smooth. Using a rubber spatula stir in the flour until just combined. Finally stir in the sprinkles.
- Spread the batter into the prepared pan.
- Bake for 25-30 minutes until the edges are set. The bars might seen underdone, but allow them to cool completely.
FROSTING:
- In a large bowl beat the butter for 1-2 minutes until it's smooth.
- Turn the mixer to low and slowly add in the powdered sugar.
- Next add in 2 tablespoons of coffee (or milk) and mix on medium speed until it's creamy, scraping the sides as necessary.
- If the frosting is too stiff add in 1 more tablespoon of milk until the desired consistency is reached.
- Finally add in 1-2 drops of pink food coloring and mix until a pale pink color is reached and evenly mixed.
- Spread the frosting on top of the bars and garnish with more sprinkles, if desired.
