Ingredients
2 ¼cupsall-purpose flour
1teaspoonbaking soda
½teaspoonsalt
1 ½teaspooncornstarch
¾cupbuttersoftened
¾cupgranulated sugar
¾cuppacked brown sugar
1 ½teaspoonvanilla extract
1egg and 1 egg yolk
1 ½CupsFunfetti Sprinkles
Instructions
PREHEAT oven to 375° F.
COMBINE flour, baking soda, salt and cornstarch in a large bowl. Beat butter, granulated sugar and brown sugar until fluffy. Stir in vanilla extract. Add egg beating well and then add in the egg yolk and beat until combined. Gradually beat in flour mixture. Stir in funfetti sprinkles.
Chill dough in refrigerator for 1 hour.
Drop by rounded tablespoon (or a 4cm ice cream scoop) onto un greased baking sheets.
BAKE for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes. The cookies will appear puffy, but, will thin out once they cool. Remove to wire racks to cool completely.
