A super fun soft batch style Coconut Oil Chocolate Chip Cookie Recipe. They don't taste like coconuts, are a little healthier with no butter and a recipe you need to try ASAP.

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon cornstarch
  • 3/4 coconut oil melted
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 1/2 teaspoon vanilla extract
  • 1 egg and 1 egg yolk
  • 2 cups Nestle Toll House Semi-Sweet Chocolate Morsels
  1. In a large bowl mix sugar, brown sugar and coconut oil. Blend for 4-5 minutes until light and fluffy.
  2. Add in egg and stir.
  3. Add in egg yolk and combine.
  4. Incorporate cornstarch, salt and baking soda.
  5. Next slowly add in flour 1/4 c at a time.
  6. Lastly add in morsels.
  7. Set cookie dough aside in the refrigerator to let chill.
  8. Using a cookie scoop place cookie dough on a lined baking sheet and bake for 8-10 minutes.
