Chocolate Chip Pumpkin Bars

These Chocolate Chip Pumpkin Bars are a great afternoon snack, a quick dessert to take to a fall party or just to enjoy on a Sunday evening surrounded my family.

Ingredients

  • 4 TBSP Unsalted Butter room temp
  • 1/4 C Light Brown Sugar
  • 1/4 C Honey
  • 3/4 C Pumpkin
  • 1 1/2 C Old Fashion Oats
  • 1 C Whole Wheat Flour All Purpose works too
  • 1 TSP Baking Soda
  • 1 TSP Ground Cinnamon
  • 1/4 TSP Nutmeg
  • 1/2 TSP Salt
  • 1/2 C Chocolate Chips

Instructions

  • In a large bowl mix butter, brown sugar and honey.
  • Add in pure pumpkin and stir.
  • Next mix in oats and flour.
  • Add in baking soda, cinnamon, nutmeg and salt, stir until mixed well.
  • Stir in chocolate chips.
  • In a 8x8 baking dish spray with non stick spray.
  • Pour mixture into the pan and spread until even.
  • In a preheated oven on 350 degrees bake for 20 minutes.
  • Remove from oven and let cool.
  • Sprinkle with powdered sugar and cut with a sharp knife to serve.
