In the crockpot place celery, onions, carrots on the bottom of the crock pot.
Next add in chicken breasts and season with salt and pepper.
Pour in water to cover veggies and allow to cook on high for 3 hours.
Next add in chicken stock, stir.
10-15 minutes prior to serving peel biscuits into bite size pieces and add in. I added 4 biscuits. You can do more or less depending on the amount of dumplings you enjoy.
Allow biscuits to fluff up and serve.
If making homemade Dumplings: About a half hour before serving make your dumplings in a bowl. Sprinkle your work surface and rolling pin with cake flour. Roll the dough out until it’s about ½” think. Using a pizza cutter (or sharp knife) cut 2″ diamond shapes (just got diagonally). Add the dumplings into the pot and let cook for 10-15 minutes.
