Apple Snack Cake
These Apple Snack Cakes will make a great addition to your treats list! They’re easy to make and are great for when apple season comes around.

- 1 c all-purpose flour, sifted
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 4 tbsp unsalted butter, melted
- 1/4 c light brown sugar
- 1/4 c granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 c chopped apple
- 1 tbsp granulated sugar
- 1 tsp cinnamon
- 1/2 c powdered sugar
- 2-4 tsbp heavy cream
- 1 tsp vanilla
Preheat oven to 350 degrees. Prepare a 9x9 baking pan with non-stick spray or line with foil for easy removal (spray the foil with non-stick spray).
Sift together the flour, baking powder, salt and ¼ tsp cinnamon in a medium bowl. Set aside.
In a large bowl, mix together the melted butter, brown sugar and the ¼ cup granulated sugar.
Add in the egg and vanilla, and then mix until combined.
Slowly mix in the flour mixture until all combined. Fold in the apples.
Spread the mixture into your prepared pan.
In a small bowl, mix together the cinnamon topping.
Sprinkle over the top of the batter.
