TOMATO AND BASIL PASTA SALAD

Ingredients

  • ½ Box Rotini Noodles
  • 1/2-3/4 cup Ricotta Cheese
  • 1 cup cherry tomatoes halved
  • 2 tsp basil basil
  • ¼ tsp salt
  • Pepper to taste
  • Parmesan Cheese

Instructions

  • Boil water and cook to directions on your noodles box.
  • In a large bowl mix the cherry tomatoes, basil, salt and pepper. The salt helps let the tomatoes to sweat a bit.
  • Drain noodles.
  • Add noodles to your tomato mixture and stir.
  • While noodles are still warm add the Ricotta cheese and mix. Ensure that all the noodles are coated with the Ricotta Cheese.
