TOMATO AND BASIL PASTA SALAD
A quick pasta salad that is both delicious and satisfying.

- ½ Box Rotini Noodles
- 1/2-3/4 cup Ricotta Cheese
- 1 cup cherry tomatoes halved
- 2 tsp basil basil
- ¼ tsp salt
- Pepper to taste
- Parmesan Cheese
Boil water and cook to directions on your noodles box.
In a large bowl mix the cherry tomatoes, basil, salt and pepper. The salt helps let the tomatoes to sweat a bit.
Add noodles to your tomato mixture and stir.
While noodles are still warm add the Ricotta cheese and mix. Ensure that all the noodles are coated with the Ricotta Cheese.
