Instant Pot Green Bean Casserole

- 2 tablespoons unsalted butter
- ¾ cup white onion chopped
- 2-3 garlic cloves minced
- 8 ounces mushrooms coarsely chopped
- 8 cups green beans cut in 1 inch pieces
- 1 cup broth vegetable or chicken
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon corn starch
- 3/4 cup sour cream
- 1 cup cheddar cheese shredded
- 4 ounces French fried onions
Turn Instant Pot on to saute mode and saute the onions and garlic together with butter for 1-2 minutes while stirring.
Add in the mushrooms and saute for an additional 2-3 minutes.
Add seasonings, stock, and green beans.
Close the instant pot lid and turn pressure valve to seal. Cook on manual high pressure for 1 minute.
Allow for a quick pressure release and then add in the cornstarch, sour cream and cheese. Stir it all together.
Transfer to a small baking dish (8 inch square or similar) and top with additional French fried onions and cheese to garnish.
