Ingredients
1 16ouncebag of frozen peas
1 6 - 8ouncefresh pea pods
1can water chestnutsdrained
4stalkscelerywashed and sliced
1small sweet onionpeeled and chopped
1cupshredded cheddar and jack cheese
1cupcrumbled bacon 8 slices
1 15 - 16ouncepackage of crunchy tortilla stripsusually found with the salad toppings
FOR THE DRESSING:
2cupsMiracle whip
¼cuprice wine vinegar
¼cupsour cream
¼cupsugar
¼cuphoney Dijon mustard
1teaspoonminced garlic
1teaspoonseasoned pepper
⅛teaspoonsalt
Instructions
In a large serving bowl, combine the frozen peas, fresh pea pods, water chestnuts, celery, onion, cheese, and bacon. Stir all together, and set aside. In a blender, combine the Miracle Whip, rice wine vinegar, sour cream, sugar, honey Dijon mustard, garlic, seasoned pepper, and salt, and blend until well mixed.
Remove blender canister, and scrape down sides of the canister to make sure all ingredients are mixed. Pour the dressing over the salad, and toss with two large spoons to coat all salad ingredients.
If serving immediately, add tortilla strips to salad. If making ahead; cover bowl, and place in refrigerator until time to serve.
Remove from refrigerator when ready to serve, and give the salad a good stir to make sure dressing is well blended.
Add tortilla strips to salad just before serving. Enjoy!
Notes
NOTE: OPTIONAL: You can also add chopped red bell pepper, shredded carrots, cashews, peanuts, or chopped bok choy to the salad, or other favorite ingredients if desired.
