Ingredients
3dozen ripe cherry tomatoes
½sweet onion - peeled and minced
1large Avocado - pitted and mashed
1Tablespoonof minced garlic
1large ripe tomato - peeled and smashed
1teaspoonof coarse ground garlic salt
1teaspoonof seasoned pepper
1teaspoonof seasoned salt
2limes - juiced
1teaspoonof lime zest
Instructions
Wash and dry the cherry tomatoes, and with a corer, core out the center - middle of each one.
Cut the Avocado in half, and remove the pit.
Scoop out the avocado, place it in a bowl, and mash with a fork.
Cut the large tomato in half, and scoop out the tomato, and add it to the avocado, and mash the tomato and avocado together, until completely smashed, and blended.
Add the minced onion, garlic, garlic salt, seasoned pepper, seasoned salt, lime juice, and zest. Stir all ingredients until well mixed.
Place the avocado mixture into a Ziploc bag, and snip off one corner, Pipe the avocado filling into the cherry tomatoes, and when all tomatoes have been filled, place in a dish in the refrigerator.
Keep refrigerated until time to serve. Best served within 24 hours of filling. Enjoy!
