This Lime rice recipe is really great. It's flavorful and can be served with so many other dishes, as a side dish, or even for the main course when you add chicken, beef, or pork to the rice. It's really simple and quick, and the Instant Pot cooks it perfectly.

Ingredients
1tablespoonolive oil
½cupfresh lime juice
½cupblack beansdrained
1 ½cupswater
1cupJasmine rice
¼cupchopped cilantro
½teaspoonsalt
1teaspoonof minced garlic
Instructions
Turn the Instant Pot to the SAUTE setting, and add the olive oil and garlic, and cook the garlic about 1 minute, and turn off the Instant Pot.
Rinse the Jasmine Rice in a strainer, or sieve, with cold water, drain and add to the Instant Pot.
Add the water to the Instant Pot and stir. Add lime juice, black beans, salt, and Cilantro, and stir well. Make sure ingredients are in an even layer in the Instant Pot
Place the lid on the Instant Pot until it beeps and locks. Set the pressure valve to SEALING. Press the Manual button, and set the time for 6 minutes. Allow the Instant Pot to automatically build and release the pressure.
When Rice is done, and Pot has released pressure, beeps and goes to off, make sure the float valve button is down, and with a pot holder, carefully turn the pressure valve to VENTING, to make sure all pressure has been released. Remove the lid, and fluff Rice with a large spoon (don't stir it).
Remove rice to a serving dish, and serve immediately. Enjoy!
Notes
NOTE: If you prefer your rice dish buttered, you can add butter to the water, and cook the rice with butter.
