Here's a real treat that tastes like summer and is so good for you. The watermelon is so refreshing, and hydrating, and the chia pudding is smooth and creamy and a healthy treat anytime. You're going to love this one for breakfast, or a great afternoon snack. You can make this ahead and keep it in the refrigerator to grab when you're on the go.

Ingredients
1small watermelon - or store-bought watermelon chunks or slices
1cupchia seeds
1cupmilkalmond, soy, or half and half
1cupvanilla yogurt
1teaspoonvanilla
¼cuphoney
½cupWatermelon juice approximately ½ to ¾ cup - the amount will depend on how much juice melon extracts
Whipped cream
8 - 10small glass containersor containers of your choice
Instructions
In a medium bowl, combine the Chia seeds, milk, vanilla yogurt, honey, and vanilla, and stir until pudding starts to thicken.
Place pudding in refrigerator. (If you choose to buy store bought already prepared melon, you'll skip the next step to prepare the melon).
Wash the melon by running cold water over it for a couple of minutes, turning it so that all sides are cleaned. Dry with paper towels, and place the watermelon in a dish (such as a glass baking dish, 9 X13 with sides) before cutting: this will allow the juice to stay in the dish instead of running all over your counter.
With a large sharp knife, cut the melon in two, and then in two again. You should have 4 large pieces. You can cut the melon in small slices, or chop the melon in pieces, either way, is fine. Remove the pudding from the refrigerator and add the watermelon juice to the pudding and stir well to blend.
Add a piece, or slice of the watermelon to a small glass container, and place a generous amount of the pudding on top of the melon. Add whipped cream to the top of the pudding, cover and place in the refrigerator to chill for about an hour.
Place watermelon slices/pieces in a covered container, and refrigerate. Just before serving the pudding, top with an additional slice/piece of watermelon. Enjoy!
