  • 9 " unbaked pie shell
  • 3 eggs
  • 3/4 c sugar
  • 1 tsp vanilla
  • 2 1/2 c hot milk heat milk to just before boiling
  • 1/2 tsp nutmeg


  • Preheat oven to 350°.
  • Place pie shell in a pie dish and pierce with a fork to ensure the crust doesn't bake up.
  • Place pie shell in oven and cook for 10-15 minutes until golden brown.
  • Meanwhile, work on your custard.
  • Place eggs in bowl and beat.
  • Add in sugar, salt, and nutmeg.
  • Next, add in scalded milk and slowly drizzle it in. Otherwise, you end up cooking your eggs.
  • TIP: if you want a more yellow color, add in a few drops of yellow food coloring.
  • Pour custard into the pie crust.
  • Bake at 400° for 30-35 minutes or until a knife/toothpick comes out clean when inserted into the center of your egg custard pie.
  • Cool before serving.
