Ingredients
2 - 3cupsof shredded chicken breastyou can use Rotisserie - or store bought deli chicken
1box of Tostada shells
½cupof salsa
1can of pinto beans - drained and rinsed
8ouncesof shredded cheddar cheese
1Avocado - pitted and mashed
1lime - juiced
1teaspoonof taco seasoning
1 -2cupsof shredded lettuce
salt
pepper
Instructions
Preheat the oven to 400 degrees. In a bowl, mix together the chicken, salsa, and pinto beans. Place the Tostada shells on a baking sheet lined with parchment paper.
Top each shell with 2 Tablespoons of the chicken mixture, and 1 Tablespoon of cheese. Bake for 5 minutes, or until the cheese is melted and bubbly.
Remove the Tostada's from the oven, and set aside. Mash the avocado with lime juice, and 1 teaspoon of taco seasoning, salt, and pepper.
Top each Tostada with a spoonful of avocado, and shredded lettuce.
