5cupsfresh broccoli floretscut into small floret pieces
1cupcooked and crumbled bacon
½cuproasted pepitas
1cupsmall cheddar cubes
¼cupchopped red onion
For the dressing:
¾cupmayonnaise
¼cuppowdered sweetener
1tablespoonwhite vinegar
salt and pepperto taste
Instructions
In a large bowl, toss together the broccoli, bacon, pepitas, cheese, and onion.
In a jar with lid or bowl, shake (or whisk) together the ingredients for the dressing. Pour over salad. Toss salad until everything is completely coated.
Store in an airtight container in the refrigerator for one hour to overnight. Best eaten within 3 days.
