Combine all ingredients in a bowl except confectioners sugar. Mix with mixer on low until fully combined. Cover and refrigerate for 30 minutes.
Roll into 1 inch balls and place on an ungreased baking sheet. Bake at 375 degrees F for 15-20 minutes or until set but not brown. Let cool for a few minutes and transfer to cooling rack. While warm roll in powdered sugar. Let cool completely. Once cooled, reroll again in powdered sugar.
