Mixt together the peanut butter and powdered sugar.
Lay out 20 of the crackers on a parchment lined baking sheet.
Spread the peanut butter mixture on all 20 crackers, then top each peanut butter covered cracker with another cracker to make little sandwiches.
Melt the chocolate with the coconut oil in 20 second increments in the microwave, stirring after each increment. It should not take more than 1 minute.
Place one cracker sandwich in the chocolate at a time and cover it completely with the melted chocolate, wiping away any excess before returning it to the parchment lined baking sheet. It helps to use a fork and spoon to do this.
Repeat step 5 for all cookie sandwiches.
Place the cookies to set in the fridge for about 20 minutes, or until the chocolate is solid again.
Notes
Feel free to omit the powdered sugar for a less sugary treat.
