Easy Christmas Ritz Cookies Recipe

Ingredients Needed:
- Ritz Crackers
- Peanut Butter
- Powdered Sugar
- Semi-Sweet Chocolate Chips
- Coconut Oil
- Christmas Sprinkles
Equipment Needed:
- Baking Sheet
- Parchment paper
- Bowl
- Spoon & fork
Peanut Butter Stuffed Ritz Cookies
Servings 40 cookies
Ingredients
- 40 Ritz Crackers
- ¾ cups Peanut Butter
- ⅓ cup Powdered Sugar
- 1 ½-2 cups Semi-Sweet Chocolate Chips
- 1 tablespoon Coconut Oil
- 2 tablespoons Christmas Sprinkles
Instructions
- Mixt together the peanut butter and powdered sugar.
- Lay out 20 of the crackers on a parchment lined baking sheet.
- Spread the peanut butter mixture on all 20 crackers, then top each peanut butter covered cracker with another cracker to make little sandwiches.
- Melt the chocolate with the coconut oil in 20 second increments in the microwave, stirring after each increment. It should not take more than 1 minute.
- Place one cracker sandwich in the chocolate at a time and cover it completely with the melted chocolate, wiping away any excess before returning it to the parchment lined baking sheet. It helps to use a fork and spoon to do this.
- Repeat step 5 for all cookie sandwiches.
- Place the cookies to set in the fridge for about 20 minutes, or until the chocolate is solid again.
Notes
Feel free to omit the powdered sugar for a less sugary treat.
