Instructions
Preheat the oven to 375°F. Grease a 9x13-inch baking dish with cooking spray or butter.
Spread the frozen tater tots in an even layer in the bottom of the prepared baking dish.
In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika until well combined.
Stir in ½ cup of the shredded cheddar cheese, diced bell peppers, and diced onion. Mix until all ingredients are evenly distributed.
Pour the egg mixture over the tater tots in the baking dish, ensuring even coverage.
Top with the diced ham or bacon (if using) and add the remaining shredded cheddar cheese over the top of the casserole.
Cover the baking dish with aluminum foil and bake for 25-30 minutes. This will allow the eggs to set.
After 25-30 minutes, remove the foil and continue baking for an additional 10-15 minutes or until the top is golden brown, and the casserole is firm in the center.
Once done, remove the casserole from the oven and let it cool for a few minutes.
