Lay out your Ritz crackers on a 9x13 inch baking sheet and set aside. Preheat your oven to 350°F.
Combine your butter, brown sugar, and vanilla in a small saucepan over medium heat. Stir the ingredients occasionally until the butter is completely melted. Once the butter is finished melting, continue stirring the mixture for one minute.
Pour the butter mixture over the crackers and use a silicone spatula to fold the crackers until they are evenly coated.
Bake your Ritz for 8 minutes. While the crackers are in the oven, whisk together the granulated sugar and ground cinnamon in a small bowl.
Sprinkle the cinnamon sugar over your crackers as they come out of the oven and use the silicone spatula to fold the mixture again.
Allow the churro bites to cool on the counter for 15-20 minutes before serving. Enjoy!
Notes
You can store your Ritz churro bites on the counter for up to a week in a plastic container or Ziploc bag. After that they start to get stale. Make sure your crackers are sealed tightly to keep them fresh as long as possible.
