Cinnamon Sugar Snacks
Looking for a delicious snack/dessert idea?! You must try these churro ritz bites, they are so good! My son could not stop eating them. I think I will make them for my next party to sit out in a bowl!
Notes:
- I like to use a silicone spatula since the sugar mixture will not stick as bad compared to a wooden spoon when stirring. It also makes it a little easier to fold the crackers when adding the butter mixture and cinnamon sugar.
- If you want to cut down on your clean up time a little bit then you can line your baking sheet with parchment paper, but it is not completely necessary. Any sugar that sticks to the pan will come off easily when run under warm water.
- Allowing these crackers to cool before serving helps ensure the brown sugar butter mixture will not burn you. It will be quite hot when it comes out of the oven, so you want to give it time to settle. Giving your crackers time to cool will also help ensure the cinnamon sugar coating is nice and stuck to the crackers.
- The saltiness of the crackers provides a nice contrast to the sweetness of the sugar and pairs nicely with the warmth of the cinnamon.
- You can store your Ritz churro bites on the counter for up to a week in a plastic container or Ziploc bag. After that they start to get stale. Make sure your crackers are sealed tightly to keep them fresh as long as possible.
- We usually use about 1 ½ boxes of the mini Ritz peanut butter crackers.
Equipment Needed:
- 9×13 inch baking sheet (with a rim on it to prevent the crackers from sliding off)
- Parchment paper (if you want to save on clean up time)
- Silicone spatula
- Small saucepan
Ritz Churro Bites
Servings 8
Ingredients
- 4 cups mini Ritz peanut butter crackers
- ¼ cup salted butter
- ½ cup light brown sugar
- 1 teaspoon vanilla extract
- ½ cup white granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Lay out your Ritz crackers on a 9×13 inch baking sheet and set aside. Preheat your oven to 350°F.
- Combine your butter, brown sugar, and vanilla in a small saucepan over medium heat. Stir the ingredients occasionally until the butter is completely melted. Once the butter is finished melting, continue stirring the mixture for one minute.
- Pour the butter mixture over the crackers and use a silicone spatula to fold the crackers until they are evenly coated.
- Bake your Ritz for 8 minutes. While the crackers are in the oven, whisk together the granulated sugar and ground cinnamon in a small bowl.
- Sprinkle the cinnamon sugar over your crackers as they come out of the oven and use the silicone spatula to fold the mixture again.
- Allow the churro bites to cool on the counter for 15-20 minutes before serving. Enjoy!
