How to Make Low Carb Tacos

When making these low carb tacos, you want to carve out the center of zucchini creating a zucchini boat. Bake the zucchini while making the filling. The filling will go inside of the low carb taco boats and then it goes back into the oven to melt the cheese. While these zucchini filled low carb tacos don’t have the traditional crunch of a taco, it does create a delicious meal.

  • Use Taco Seasoning: You can use taco seasoning in order to season these zucchini filled low carb tacos.
  • Change the heat: You can add more jalapeños or less depending on how much heat you like.

Zucchini Filled Low Carb Tacos

Ingredients:
  • Zucchinis
  • Ground Turkey
  • Red Onion
  • Red Pepper
  • Jalapeños
  • Pepper
  • Onion Powder
  • Garlic Powder
  • Shredded Mozzarella Cheese
  • Salsa for Dipping ( Optional )

NOTE: To keep low carb, do not use corn or black beans as they are high in carbs. If you do use them and calculating your carb count, it will increase to about 60G of carbs.

Step by Step:
  1. Start by dicing your onion, red pepper, and jalapenos. diced peppers and onionsPin
  2. Next cut the end off of each zucchini and slice ¼ of the front off, long ways.
  3. Scoop out the insides with a spoon.
  4. Brown your turkey burger, and add in diced vegetables, black beans, corn, pepper, garlic, and onion powder. filling for taco boatsPin
  5. Stir on medium heat until warm.
  6. Spoon mixture into each zucchini. filling in the zucchinisPin
  7. Place “boats” into a baking dish and cover with foil.
  8. Bake at 400 degrees for 25 minutes.
  9. Remove foil, and add shredded cheese to each boat.
  10. Bake an additional 5 minutes or until cheese is melted.
  11. Serve and enjoy!
