The answer is YES! But, it’s not just set the whole egg carton in the freezer and you’re done. You should not freeze them with shells on. They should also not be past the expiration date. Make sure to check out my how to freeze milk post too!
Just crack each egg into an ice cube tray then set on a cookie sheet and stick in your freezer for a few hours. Once they are hard, pop them out and put them into a airtight container/ziplock bag. You can freeze these for up to a year! You can also put eggs into a bowl then whisk them up like a scrambled egg batter. Pour into muffin tins and freeze! Get them out and put in airtight container or freezer bag. Can be stored up to a year.
The gelation property of egg yolk causes it to thicken or gel when frozen, so you need to give yolks special treatment. If you freeze them as they are, egg yolks will eventually become so gelatinous that they will be almost impossible to use in a recipe. To help retard this gelation, beat in either 1/8 teaspoon salt or 1 1/2 teaspoons sugar or corn syrup per 1/4 cup of egg yolks (about 4 yolks). How do I unthaw the eggs?
When you’re ready to use them, put them in the refrigerator the day or 2 before you want to use them. You can also run them under warm water in a bag. Thawed egg whites will beat better if you have them at room temperature for 30 minutes.
What about freezing cooked eggs?
Yes absolutely! Just cook your scrambled eggs a bit runny, let cool then wrap in saran wrap getting all the air out. Stick in a ziplock bag or airtight container. These can be frozen for 3-6 months. These work great for making breakfast burritos!
