How to Make Homemade Scotcheroos
One of my favorite Christmas bars to make are these scotcheroos! They are SO addicting and everyone just loves them at the holidays. They taste like a peanut butter rice krispie bar topped with creamy milk chocolate and a hint of butterscotch flavor. They. are. amazing.
What ingredients do I need to make scotcheroos?
- Sugar
- Creamy Peanut Butter
- Light Corn Syrup
- Vanilla Extract
- Rice Krispie cereal
- Cooking spray
- Butter
- Butterscotch morsels/chips
- Milk chocolate chips
Scotcharoos
Ingredients
Rice Krispies:
- ½ cup Sugar
- ¾ cup Creamy Peanut Butter
- 1 tbsp Unsalted Butter
- ¾ cup Light Corn Syrup
- 1 tsp Vanilla Extract
- 4 ½ cups Rice Krispie cereal
- Cooking spray
Topping:
- 1 tbsp Unsalted Butter
- 1 cup Butterscotch morsels
- 1 ½ cups Milk chocolate chips
Instructions
- Grease a 9×13 baking dish with cooking spray.
- In a large pan, combine the corn syrup, tbsp of butter, and sugar over medium heat. Stir continuously until it starts to boil.
- Take the pan off the heat and add in the vanilla extract and peanut butter. Stir until combined.
- Pour the rice krispies into the mix and fold them into each other until completely covered.
- Pour the rice krispies into the greased baking dish and press it down with a spatula to the edges evenly.
- In a pan, melt the chocolate chips, butterscotch chips, and butter until smooth. You can also use the microwave at 30 second intervals, stirring until melted.
- Pour it on top of the rice krispies and smooth it out with a spoon.
- Chill in the fridge 20 minutes until the topping is hardened.
- Take it out and cut squares. Enjoy!
