The story goes I was watching my {online} friend, Carrie of Eating on a Dime, make a Cookie Cake on Facebook Live for one of her kiddos birthdays. I thought this was a GREAT idea! It quickly became one of our birthday traditions as well!
I used my Chocolate Chip Cooke Recipe to create my own Chocolate Chip Cookie Cake recipe, but, it was her idea that got me started! I then ended up creating my own Whipped Buttercream Frosting to decorate the cookie cakes with. We like a light and airy frosting rather than a dense and stiff icing. To each his own, right?!?
Now, I created this Sugar Cookie Cake on a whim. I surprised the daughter of a friend, Krystal {holla girlfriend!} with this beauty. I sure hope that they enjoyed it as much as the little kids and I had creating it!
How to make a Sugar Cookie Cake
If there’s one tip that I can give you when it comes to making a Sugar Cookie Cake is to not over bake it. Once the center sets, it’s done! Another tip I will share is that you want your cookie dough light. That’s why I sifted my ingredients!
Now if you are sitting here thinking to yourself that you can’t do this, yours won’t look this good, etc. YOU CAN DO IT! This picture I’m using is seriously only the 4th cake that I’ve decorated in my entire life!
I have to say that the Decorating Bag Set does make it easy. I’ve tried every other decorating bag out there, from the reusable bags to snipping off the end of a Ziploc bag and everything in between. But, the fact that I can throw the decorating bag in the dishwasher is an added bonus for me. Plus, the tips are fun to try out.

The Ultimate Sugar Cookie Cake
Ingredients
- 3 cups flour
- 1 tsp. baking powder
- 1 cup unsalted butter
- 1 cup sugar
- 1 large egg
- 1 tsp. clear or regular vanilla extract
Instructions
- Preheat oven to 350.
- In a large bowl (I use my kitchen aid mixer) mix together sugar and butter until light and fluffy.
- Mix egg until well combined to the egg mixture.
- Next add in vanilla until combined.
- Then add in sifted flour and baking powder.
- Stir mixture until everything is incorporated using a spatula, mixture or hands.
- Create a ball and roll out onto a round baking pan/stone.
- Using a rolling pin roll out a disc leaving a ½" edge for the cookie dough to expand.
- Bake for 20-25 minutes ensuring not to over bake. Once the edge has set, remove from oven and allow to cool completely.
- Decorate and have fun!
