These Chicken tostadas are a great take on an old favorite.  You can take some short cuts and have these ready to serve quickly and easily.  You’ll love the flavors, and anyone who tastes these tostadas is sure to love them as well.  You can add some of your favorite flavors if you want to, and make these fit what your family loves.

Variations to Chicken Tostadas

  • Jalapenos – If you like spicy, feel free to add jalapenos, chilis or other hot peppers
  • Refried Beans– If you like refried beans better than pinto beans, you can swap them.
  • Flavors: With these tostadas, you can use whatever Mexican flavors that you like. If you like strong bold flavors, add more seasoning. If you like milder, add less.
  • You can also add Taco sauce, green Chiles, cumin, sauteed red and green peppers, and onions, or other favorites to this recipe.

  • Shredded chicken breast
  • Tostada shells
  • Salsa
  • Pinto beans
  • Shredded cheddar cheese
  • Avocado
  • Lime
  • Taco seasoning
  • Shredded lettuce
  • Salt and pepper

How to Make Chicken Tostadas

Preheat the oven to 400 degrees.  In a bowl, mix together the chicken, salsa, and pinto beans. 

Place the Tostada shells on a baking sheet lined with parchment paper.  Top each shell with 2 Tablespoons of the chicken mixture, and 1 Tablespoon of cheese.

Bake for 5 minutes, or until the cheese is melted and bubbly.  Remove the Tostada’s from the oven, and set aside. 

Mash the avocado with lime juice, and 1 teaspoon of taco seasoning, salt, and pepper.  Top each Tostada with a spoonful of avocado, and shredded lettuce.

Ingredients

  • 2 – 3 cups of shredded chicken breast you can use Rotisserie – or store bought deli chicken
  • 1 box of Tostada shells
  • ½ cup of salsa
  • 1 can of pinto beans – drained and rinsed
  • 8 ounces of shredded cheddar cheese
  • 1 Avocado – pitted and mashed
  • 1 lime – juiced
  • 1 teaspoon of taco seasoning
  • 1 -2 cups of shredded lettuce
  • salt
  • pepper

Instructions

  • Preheat the oven to 400 degrees. In a bowl, mix together the chicken, salsa, and pinto beans. Place the Tostada shells on a baking sheet lined with parchment paper.
