Fried rice is such a great dish. It is tasty and is comfort food for many people. When you make this cauliflower fried rice, you get that same comfort food without the carbs. Even if you are following a diet like Weight Watchers or other low calories type eating plans, everything in this recipe is perfect for you.

This dish is just delicious!  It’s a really easy and quick dish to make, and you get the stir fry flavors, but with riced cauliflower and vegetables, which gives you healthy stir fry without a lot of carbohydrates.  So when you’re hungry for stir fry, make this your go-to recipe, you won’t be disappointed.

What to Serve with Cauliflower Fried Rice

This is a veggie packed dinner so it can be a complete meal on its own. However, if you are looking for something to serve with it, try:

  • Grilled Chicken Breast
  • Spicy Crock Pot Pulled Pork
  • Crock Pot Shredded
  • Chicken Teriyaki Stuffed Peppers Replace the rice in these stuffed peppers with this cauliflower rice for a delicious low carb stuffed pepper idea.

Variations to Cauliflower Fried Rice

  • Bean Sprouts: Often times fried rice will have bean sprouts, feel free to add them
  • Egg: Some places serve scrambled egg in the fried rice. You can add it to this fried “rice”
  • More Veggies: You can as many other types of veggies as you like. It does change the nutritional information, however.

Ingredients for Cauliflower Fried Rice

  • Frozen riced cauliflower
  • Onion
  • Green bell pepper
  • Red bell pepper
  • Carrots
  • Garlic
  • Olive oil
  • Soy sauce
  • Chicken bullion
  • Garlic salt
  • Salt
  • Pepper
  • Ground ginger

How to Make Cauliflower Fried Rice

In a non-stick skillet, add the olive oil, and heat it for about 1 minute on medium. Add the chopped onion, green bell pepper, red bell pepper, and carrots, and saute until golden brown. 

Add the soy sauce, 2 Tablespoon of water, and the chicken bouillon cube stir, and cook until the bouillon cube melts. 

Remove the cauliflower from the freezer, and break up the riced cauliflower in the bag before opening. 

Add the riced cauliflower to the skillet, and cook until all liquid has been absorbed.

Add the minced garlic, garlic salt, seasoned salt, seasoned pepper, and ground ginger, stir and cook until cauliflower is a little browned.

Remove skillet from heat, and serve immediately.  Enjoy

  • 1 package of frozen riced cauliflower 12 – 16 ounces
  • 1 medium sweet onion – chopped
  • 1 green bell pepper – chopped
  • 1 red bell pepper – chopped
  • 4 carrots – chopped
  • 1 teaspoon of minced garlic
  • 2 Tablespoons of Olive oil
  • 4 Tablespoons of soy sauce
  • 2 Tablespoons of water

  • 1 teaspoon of coarse ground garlic salt
  • 1 teaspoon of seasoned salt
  • 1 teaspoon of seasoned pepper
  • 1 teaspoon of ground ginger
