Lemon Garlic Chicken with Baked Veggies {Dinner on One Pan}
One of my all time favorite Dinners to make is this Lemon Garlic Chicken with Baked Veggies…dinner is done with 5 minutes of prep and 20 minutes of cook time!
As I had been recovering from surgery and not really able to get to the grocery store Jas has been doing the shopping for the most part! He’s never really been much of a cook and ALWAYS ate out when I met him, nearly 15 years ago! I had expected him to just pick dinners up on the way home from work as time was super limited in the evening. He only has about 2-3 hours most nights with the kids so I didn’t want him to have to take that time and make us meals. However, he surprised me and ended up making damn near every meal.
Kroger has this FABULOUS Stir Fry package already put together in the produce refrigerated section. You can either throw it in as a Steak Stir Fry type of thing or even better put it on a Pan with a couple pieces of Chicken Breast seasoned with Lawry’s Lemon Pepper seasoning and you have yourself a complete meal.
This has become one of my favorites as I’ve been recovering because it takes less than 5 minutes to put it together, the oven does all the work and the end result is tender, juicy chicken that’s packed full of lemon and the vegetables are tender and wholesome. This is one of those “feel good meals” that will fill your belly up!
Not to mention the kids LOVE this Lemon Garlic and Baked Veggies Meal. There’s never any leftover and often times Beanies is asking for more. This is one of those dinners that can be made while you are helping the kids with their homework or maybe even take a few for yourself and read a chapter in a book!

Lemon Garlic Chicken with Baked Veggies {Dinner on One Pan}
Ingredients
- Lawry's Lemon Pepper Seasoning
- 2-3 Chicken Breasts
- 1 Package of Stir Fry
- Olive Oil
Instructions
- PREHEAT oven to 375.
- On a Large Pan place chicken breast and stir fry.
- Season chicken breast with Lawry's Lemon Pepper Seasoning on both sides.
- Toss the stir fry with 2-3 tablespoons of olive oil until coated, sprinkle lightly with Lawry's Lemon Pepper Seasoning.
- Bake for 20-25 minutes until chicken is cooked through.
