There’s one fresh vegetable that the girls will ONLY eat with bacon. Now, while I love bacon, I’ve been trying to get the girls to slowly transition into eating green beans the way I like to cook them!
So for the past few years now I’ve found an obsession for fresh green beans. I boil them in a pot of water for a few minutes while my garlic and onion are doing it’s thing and then toss the green beans in the pan with the deliciousness. I then sprinkle with a bit of sea salt and pepper and it’s glorious! However, I do make these green beans a few others ways and it’s totally my fault for the girls to only eat them with bacon.
You see one morning I had served bacon. There was a bit leftover {I don’t even know how that happened, we never have leftover bacon!} so I decided to chop the four pieces up and throw into the green beans to give a bit of variety! Well all be damned the girls ate all of their green beans and Beanies asked for more…there was no more!
She demanded that I only make green beans with bacon and stomped off!
The next time I made green beans I had leftover ham and again chopped it up and put it into the green beans. The girls ate them, but, not with as much pride as they did when the bacon was involved!
The morale of this story is to add bacon to whatever vegetable you are trying to get your kid(s) to eat…they’ll eat it and then ask for more!

My Favorite Way to Eat Green Beans, Onion & Garlic
Ingredients
- 5 Handfuls Green Beans maybe 1 ½ lbs
- ½ Yellow Onion Diced
- 3 Cloves Garlic Minced
- 2 TBSP Olive Oil or Butter
- Sea Salt & Pepper to Taste
- Cooked Bacon or Ham optional
Instructions
- In a large pot boil green beans for about 6-8 minutes. The color will become brighter, that's when you need to drain.
- In a skillet place oil, onion and garlic and cook until onion is translucent.
- Pat green beans dry and place into skillet.
- Toss the green beans, onion and garlic until the green beans are coated.
- Sprinkle with salt and pepper.
- If you have bacon or ham to add you'll want to add that in with the onions and garlic to heat up.
Nutrition
I will tell you that I eat these a few times a month for lunch! It’s a great way to get in veggies that wouldn’t otherwise happen and is super quick to cook. You can have these on your plate within 15 minutes.
