So remember the other day I posted about my Chicken Tortilla Soup that I literally made with little to no groceries in our home? Well, the next day for lunch I was starving and needed to feed myself, the Tiny Girl and Mr. Man. I had to get a bit creative as Tiny Girl refused to eat the soup for dinner the night before. So creative I got….
Chicken Tortilla Nachos was born.
Now you may be thinking “How were they not soggy?”. Well the answer my love was that I drained off the water/broth part and was left with the yummy goodness of chicken, corn, beans, onions, tomatoes and the seasoning.
Again I found the 3 year old complaining that she didn’t like the beans that they were “YUCKY!” so I removed them from the mix….again, to make my kid happy because I had the battle of meal time.
Hand her a apple and she’s good to go. Hand her yumminess on a plate and she picks a fight. I don’t get this kid. Do you EVER think I will?!?
Ingredients
- Leftovers from Chicken Tortilla Soup
- Tortilla Chips
- Shredded Cheese (I used Colby)
- Sour Cream
Directions
Brace yourself, this is a hard one!
Place tortilla on a microwave safe plate. Sprinkle shredded cheese onto the tortilla chips. Using a slotted spoon (so the chicken mixture is all you have on the spoon) place the chicken tortilla ingredients onto the top of the cheese. Place in the microwave (about 30-45 seconds) until cheese is melted and the chicken mixture is heated up.

See how easy that was? My 3 year old even helped by pushing the numbers on the microwave. It’s something about her using the microwave and the toaster that she gets a kick out of….I’m hoping that carries over into her teen years and she can cook Mommy a gourmet meal on the stove. Here’s to hope!
