The ingredients found in this Chipotle Corn Recipe are simple, everyday ingredients that you can conveniently find in your local grocery store. I love to use frozen corn when corn isn’t in season versus the canned stuff. The kernels are cut from the cob and simply placed into a bag and frozen to preserve the freshness! Nothing wrong with that, right?!?

INGREDIENTS

  • Frozen corn
  • Fresh Cilantro, chopped
  • Red Onion, chopped
  • Chipotle Mayo
  • Queso Fresco

How to Make Mexican Street Corn Salad 

  1. On a large cutting board chop onion and cilantro.
  2. Meanwhile, over medium high heat cook corn and onion for 8-10 minutes until corn is heated with a few char marks and onion is softened.
  3. Remove the skillet from heat.
  4. To the corn add in mayo and cilantro.
  5. Stir thoroughly.
  6. Add in Queso Freso and stir.
  7. Plate and garnish with cilantro and queso fresco.
  8. Serve warm.

Ingredients

  • 10 oz. bag frozen corn
  • ¼-1/2 C Fresh Cilantro chopped
  • ¼ C Red Onion chopped
  • 2 TBSP Chipotle Mayo
  • 4 TBSPish Queso Fresco

Instructions

  • On a large cutting board (I use the Flexible Cutting Mats) chop onion and cilantro using the Food Chopper or a Knife if you don't have one.
  • Meanwhile, over medium high heat cook corn and onion for 8-10 minutes until corn is heated with a few char marks and onion is softened.
  • Remove the skillet from heat.
  • To the corn add in mayo and cilantro.
  • Stir thoroughly.
  • Add in Queso Freso and stir.
  • Plate and garnish with cilantro and queso fresco.
  • Serve warm.

  2. This looks good (we’ll be leaving out the cilantro because we think it tastes like soap) but the method and recipe, yum!
