So it is no secret that Ree Drummond aka ThePioneerWoman.com is a UH-MAZING cook. If I could live in a shack along the dirt road that leads to the cabin I’d be a happy person…cause I’d just invite myself over as she tapes her shows and sneek bites in every now and then. I may even photobomb filming with a few thumbs up along the way. If she’s super laid back like she appears to be then I will even chop onions for food!
Anyway, I decided to make Ree’s {see, I’m already referring to her as if she were my BFF!} Chocolate Chocolate Chip Cookies. After I made the batter and cooked two dozen cookies I realized I was gonna be here all day.
As a Momma to 3 VERY busy children, I just couldn’t bake them all {as much as I wanted to}. Plus, I can’t freeze cookie dough and make them later. It just doesn’t taste the same!
So, I wondered if I could put them in a pan and turn them into brownies….well I wondered correctly and they were both equally delicious!
Ingredients
- 2-½ sticks Butter, Softened
- 2 cups Sugar
- 2 whole Eggs
- 3 teaspoons Vanilla Extract
- 2 cups Flour
- ¾ cups Cocoa Powder (buy in bulk on Amazon)
- 1-½ teaspoon Baking Soda
- 1 teaspoon Salt
- 1-½ cup Good Quality Semi-sweet Chocolate Chips
- 2 cups Good Quality White Chocolate Chips
Warm and pre-heat your oven to 350°F.
Using a mixer, cream butter and sugar until fluffy, scraping the sides once with a spatula. Next, add one egg at a time, mixing after each egg. Mix in vanilla.
In a separate bowl sift together the cocoa powder, baking soda, and salt. Now this is important, add in the dry ingredients to the wet ingredients a cup at a time to the mixer. You don’t want to over mix so pay attention to the mixture. Once the dry ingredients become incorporate add another cup until combined.
Gently blend in chocolate chips and white chocolate chips….and I dare ya not to take a bite!
For Cookies: Using a cookie scoop, add 1 tablespoon portions to a baking sheet. Make the cookies extra decadent by adding 3 white chocolate chips to the top of the cookie dough. Bake for 9 to 11 minutes or until cookies are barely done but still soft and chewy.
For Brownies: Now you will have enough dough to turn the cookies into a brownie. In a greased 9×9 pan, pour half the batter into the pan and spread until the bottom of the pan is covered with the cookie dough. Bake for 30-35 minutes until a toothpick comes out clean.
Let the cookies and brownies cool on a baking rack. Enjoy with a TALL glass of milk!
