A chocolate chip skillet cookie is the easiest way to make delicious chewy chocolate chip cookies. Why spend thirty minutes in the kitchen baking Chocolate Chip Cookies when you can spend 10 minutes making this delicious skillet cookie instead?!
As a Mom, I’m freakin’ busy and I know you are too! I barely have time to take a shower {yet alone by myself} on most days. Now while I’m blessed to be a stay at home Momma it’s all that I have in my body to stay away until 9 every night.
Chocolate Chip Skillet Cookie
On nights that I’m in the mood for a cookie, but I don’t wanna stand in the kitchen for 40 minutes making the cookie dough, scooping it, and baking them I will just throw the chocolate chip cookie dough into my Lodge skillet. Making a chocolate chip skillet cookie makes the entire cookie-baking process MUCH easier.
I know I’ve said this multiple times, but, I cook EVERYTHING in my cast iron skillet. I LOVE it. At first, I was a bit hesitant, like how the hell am I going to cook eggs in cast iron, but, after a few months (and a few extra fried eggs) I figured it out. 😉
This may be a bit of a surprise to you, but, I’m NOT a trained chef. 😉
Everything that I have learned about cooking has been from trial and error. Seriously. There have been more catastrophes in my kitchen than I care to admit. I share recipes that have flopped in my kitchen a few times a year just to show ya’ll that I’m a Mom and human too.
More times than not, I burn the shit out of stuff. This is the sole reason why I now Cook Bacon to Perfection in the Oven. It’s a time saver, gets me perfectly cooked and crispy bacon and allows me not to have to babysit the bacon so it gives me time to make Pancakes or French Toast.
Ok, now I’m all hungry for Breakfast over here 😉
Anyway. I love making Desserts, but, they have to be super quick, easy and I need to have the ingredients already on hand. Typically I only make dessert on Sunday. Whatever is left over can be nibbled on during the week until it’s gone. But, with 5 people in the house, that only usually takes us into Monday and then it’s gone. This sole tip is how I kept sweets at bay when I was first starting to eat the proper way.
I don’t like to say “diet” because we should be eating this way ALL the time. A REAL diet is eating fruits, veggies, whole foods, with minimal sugar consumption. For us, that also means no red or blue dyes because they make two out of the three of my kids CRAY CRAY….more on that in another article!
Alright, so a few of you have emailed me over the past couple of months wanting to know how to get perfectly cut desserts. First, I will tell you that it took a few tries for me to get it down and even then I don’t have a lot of patience, so I tend to cut when the dessert is still warm, like I did above!
Now on this particular day, the kids asked for Hershey’s Hot Fudge and I said yes, simply because we already had this on hand from J buying it at the store when I was unable to walk! If you don’t want the store-bought variety, make your own hot fudge sauce at home.
Chocolate Chip Skillet Cookie
Ingredients
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoon cornstarch
- ¾ butter softened
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 1 ½ teaspoon vanilla extract
- 1 egg and 1 egg yolk
- 2 cups Nestle Toll House Semi-Sweet Chocolate Morsels
Instructions
- In a large bowl mix sugar, brown sugar and softened butter. Blend for 4-5 minutes until light and fluffy.
- Add in egg and stir.
- Add in egg yolk and combine.
- Incorporate cornstarch, salt and baking soda.
- Next slowly add in flour ¼ c at a time.
- Lastly add in morsels and stir.
- Set cookie dough aside in the refrigerator to let chill for 20 minutes.
- Place graham cracker crumbs, butter and sugar in a pie dish and bake on 350 for 5-7 minutes until golden brown.
- Once crust has browned add the filling.
- Top the pie off with the cookie dough.
- Bake for 40-50 minutes until golden brown and flaky.
- Serve with a scoop of vanilla ice cream or Homemade Hershey Syrup for a decadent sweet treat!
