How to Make Homemade Pretzel Bites

Tips:
- Gather all your ingredients at once and prepare pans ahead of time. Make sure all your ingredients are at room temperature unless mentioned not to.
- You can make the dough by hand, just use a large bowl and wooden spoon and knead by hand on a floured counter for about 5-7 minutes.
- Use a bench scraper or a pizza cutter to the dough into sections and into pieces
- Brush your pretzel bites with some butter and sprinkle more salt on them for more taste.
Pretzel Bites with Cheese Sauce
Servings 100 bites
Ingredients
Pretzel Bites:
- 1 ½ cups warm water 100-110 degrees
- 3 tablespoons brown sugar
- 1 package yeast
- 6 tablespoons butter melted
- 2 teaspoons salt
- 4 ½ cups flour
Cooking the Pretzel Bites:
- 12 cups of water
- ¼ cup baking soda
- 1 whole egg beaten with 1 tablespoon cold water
- Coarse salt
Cheese Sauce:
- 4 oz. of Velveeta
- ⅓-½ cups milk
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
Instructions
- Add the warm water, brown sugar, yeast and melted butter to a mixing bowl and stir and let set for about 5 minutes to bloom
- Add salt to your flour and mix in a little. Add flour to the mixer and start with the dough hook on. Let the dough come together into a ball and pull away from the sides. If too sticky add more flour at a tablespoon at a time. Turn mixer to medium/low and knead dough for about 5 minutes.
- Place the dough ball in an oiled bowl and cover with plastic wrap and let the dough rise in a warm place until doubled, about 60-90 minutes.
- When dough is proofed, add 12 cups of water to a deep pot like a dutch oven and bring water to a boil. Add baking soda to water and bring back to a boil.
- Turn dough out onto the counter and divide into 8 equal pieces. On a slightly oiled surface, roll out each piece of dough into a long rope, about 20-22 inches. Cut the dough into 12-15 pieces, about an inch long.
- Preheat the oven to 425 degrees. Prep a cookie sheet with oil or pan spray. Beat egg in a small bowl.
- Drop 15-20 pieces of dough in the boiling water for about 30 seconds and then remove with a slotted spoon and place on a greased baking sheet.
- Brush bites with beaten egg and sprinkle with the coarse salt. Bake for about 15 minutes until golden brown.
- In a small microwave safe bowl add velveeta, milk, paprika, garlic powder and cayenne pepper. Melt in the microwave for 1 minute, stir and continue until smooth and melted in 20 second increments.
- Remove bites from the oven and serve hot with cheese sauce. Enjoy!
