Rolo Fudge
Ingredients
- 14 oz milk chocolate / 3 cups chocolate chips
- 14 oz sweetened condensed milk
- 40 Rolo chocolates 4 Rolo tubes, halved, divided
Instructions
- Line an 8 inch square baking tin with parchment paper, ensuring at least 2 of the sides of paper stick up enough to remove the fudge from the tin.
- Place the chocolate and entire contents of the sweetened condensed milk tin into a large microwave safe mixing bowl. Melt in the microwave in short bursts, give the mixture a good stir in between, until the chocolate has melted.
- Add half of the chopped Rolo chocolates to the chocolate mixture and gently fold through.
- Transfer the mixture to the prepared baking tin and smooth the surface. Gently press the remaining half of the chopped Rolo chocolates into the surface of the fudge, Place in the fridge for at least 2 hours, or until set, before slicing.
Notes
• The chocolate can also be melted using the stovetop. Place the chocolate and sweetened condensed milk into a small saucepan and heat, stirring, over a low heat until the chocolate has just melted.
• The Rolo chocolates in this fudge can be substituted for other chopped chocolate varieties, or even dried fruit and nuts.
