Slow Cooker Creamy Tuscan Chicken
Ingredients
- 4-5 medium sized chicken breasts
- 1 can diced tomatoes drained (14.5 oz)
- ½ cup chicken broth
- 1 ½ cups heavy cream
- 1 cup shredded parmesan cheese
- 1 tablespoon herbs de provence
- ½ teaspoon sea salt
- 4 oz fresh baby spinach approximately 2 handfuls
Instructions
- Place chicken into bottom of your slow cooker. Top chicken with sea salt, pepper, and herbs de provence. Then add in crushed tomatoes and chicken broth. Place on low for 6 - 6 ½ hours or high for 3 hours.
- Once done, add in heavy cream and parmesan cheese. Gently stir and allow to cook for an additional 30 minutes. Stir gently until cheese has melted into the heavy cream.
- Finally, add in baby spinach. Fold into the hot liquid of your chicken. Cover with lid for 2-3 minutes. Remove lid and gently fold ingredients. Serve.
