How to Make Chicken Gnocchi Soup

What ingredients do I need to make chicken gnocchi soup?
- Olive oil
- Chicken breast
- Onion
- Garlic
- Carrots
- Celery
- Onion powder
- Garlic powder
- Salt and pepper
- Red pepper flakes
- Chicken broth
- Half and half
- Butter
- Flour
- Spinach
- Potato Gnocchi
This soup is so wonderful for the fall or winter time! Warms your belly right up.
Chicken Gnocchi Soup
Ingredients
- 2 tbsp Olive Oil
- 1 lb chicken breast chopped (about 2 breasts)
- 1 Medium Onions chopped
- 3 cloves Garlic finely chopped
- 2 Medium Carrot peeled and cut into matchsticks
- 2 Ribs of Celery chopped
- 1 tsp onion powder
- 1 tsp of garlic powder
- 2 tsp Salt
- 1 tsp Pepper
- ½ tsp Red Pepper Flakes
- 6 cups Chicken Broth
- 2 cups Half and Half
- ¼ cup Butter
- ¼ cup All Purpose Flour
- 2 cups Fresh Spinach
- 1 1 lb package of Potato Gnocchi
Instructions
- In a large pot add the olive oil over medium heat, once the oil has warmed, add in the chicken, and season with salt and pepper. Stir and cook the chicken until it’s no longer raw, about 3 minutes.
- Remove the chicken from the pot and add the onion and garlic. Cook the onion and garlic over medium heat and allow them to soften for about 2 minutes.
- Once the onion and garlic are softened and becoming translucent, season with some salt and pepper.
- Add in the carrots and celery and stir to combine. Then add the chicken back in. Season with garlic powder, onion powder, red pepper flakes and the rest of the salt and pepper. Stir to combine.
- Add in the butter and allow it to melt, stirring frequently. Sprinkle on the flour and stir until a paste has formed and it’s not easy to stir.
- Slowly add the chicken broth, stirring to incorporate all of the ingredients and making sure there are no more flour lumps.
- Cook the soup over medium heat until it comes to a boil, cover, reduce the heat to low, and allow to simmer for 10 minutes.
- After 10 minutes, add the half-and-half, spinach, and gnocchi. Stir to combine, increase the heat to medium and allow the soup to come to a boil, stirring so nothing sticks to the bottom. **This will cook the spinach and gnocchi.
- Taste the broth and adjust the seasoning to your liking at this point.
- Serve immediately.
Notes
You can easily substitute the chicken breast for chicken thighs, the cooking time will be different. You can also use rotisserie chicken, you’ll want to add the chicken in once the chicken broth has been added so it doesn’t overcook or stick to the bottom of the pot.
You can substitute the chicken broth for bone broth or you can use bouillon instead.
