How to Make Ground Beef Sticks in the Smoker

If you want to make your own beef sticks at home with NO casing, this is for you! It’s pretty simple to do and you can customize your flavors the way you want!

I got this jerky gun and this foldable sliding smoker rack that pulls out nicely on Amazon! You want to make sure you are using specifically HIGH HEAT cheese. You can usually find it for sale at your local butcher or on Amazon. You can use any jerky seasoning packet you can find but I like the PS Seasoning and Hi Mountain brand.


Jalapeno Cheddar Beef Sticks
Ingredients
- 5 lb ground beef I used 90/10
- Jerky seasoning packet + curing salt I used a Jerky Kit that came with both
- 3 jalapenos chopped
- ½ lb high heat cheddar
Instructions
- In a bowl, add the ground beef, 1 jerky seasoning packet, a salt curing packet and mix with your hands.
- Chop up 3 jalapenos small then add to bowl. Then add the high heat cheddar. Mix!
- Pack your jerky gun full then start piping it onto the rack. Make sure you leave ¼ inch space between each stick.
- Put on your smoker at 180° for 4-5 hours. You want the internal temperature to be between 152-160 degrees F.
- Remove from the smoker and let cool for 1-2 hours on a tray. You can also place them in an ice bath for 5 minutes to stop the cooking.
- Once cooled, store in the fridge for 1-2 weeks or vacuum seal them and freeze for 6-12 months.
