Y’all have probably seen my recipes and videos for my Eggless Cookie Dough and my Chocolate Dipped Cookie Dough Footballs. We LOVE edible chocolate chip cookie dough in this house, and who doesn’t? The only time I’m not “lovin’ it” is when I’m watching what I eat and it’s not on the “approved food list.” (BOO!)

Well you know I hate to feel deprived, so since I’ve been following the Keto Diet I have been knee deep in modifying and creating recipes to be Keto friendly. When I first realized I could make a quick and easy Keto Chocolate Chip Cookie Dough I thought I might swoon. Then came the squeal. Like a full-on, totally crazed, I just won the lottery squeal. Ingredients

  • ¾ C. cream or Half & Half
  • ¼ C. Erythritol sweetener or low carb sweetener of choice
  • ¾ C. coconut flour
  • ½ C. butter melted
  • ½ tsp. vanilla extract
  • pinch of salt
  • ¼ C. sugar free chocolate chips

Instructions

  • Combine the cream, sweetener, melted butter and vanilla extract mixing well.
  • Slowly fold in the coconut flour and pinch of salt and then stir in the chocolate chips.

    That will depend on what flour you use. A finer flour won’t leave that texture!

  4. Would a liquid sweetener like liquid stevia work, or is the texture dependent on a granulated sweetener?

  5. Hi Kait! You can, but, the almond flour tends to leave a grainy texture, even with finely ground flour that I just don’t like. It doesn’t absorb like the coconut flour does!
