Crispy Oven Baked Potato Skin Appetizer
Make these delicious loaded potato skins for your next party’s appetizers! I NEVER have any left to take home with me, ever. The flavors and crunch are just the best! Potato Skins

Ingredients
- 6-7 small Russet potatoes
- ½ cup of bacon cooked and crumbled (about 5 – 6 strips)
- 2 teaspoons salt
- 2 tablespoons butter or fat drippings from bacon
- 1 cup shredded cheddar cheese or cheese of choice
- 2 whole green onions diced small
- ½ cup of sour cream
Instructions
- Preheat the oven to 400 degrees. Cover cookie sheet with tinfoil and a light coat of pan spray.
- Place whole potato on cookie sheet and bake potatoes for 1 hour
- Remove potatoes from the oven, let them cool slightly so you can handle them. Slice the potatoes on the side of the potato into two halves. Scoop out the center of potato flesh leaving about a ⅓ of an inch around the potato.
- Brush the potato halves with butter (or left over fat dripping from the bacon) and sprinkle each with a little salt. Place potato halves back on the cookie sheet, skin side down and bake for 10 minutes.
- Remove potato halves from the oven and turn them over to skin side up. Brush again with butter and sprinkle with a little salt. Bake again for 5 minutes.
- Remove potato halves from the oven, turn over and add about a teaspoon of cheese to the well of the potato. Add about a ½ teaspoon of bacon to the top of the cheese. Return to the oven for about 5 minutes for the cheese to melt.
- Remove the potato halves once more and add a teaspoon plus of sour cream (or to your liking) to the top of the bacon and sprinkle some green onion on top of the sour cream. Eat hot and Enjoy!!
Notes
- Gather all your ingredients at once and prepare pans ahead of time. Make sure all your ingredients are at room temperature unless mentioned not to.
- Brushing potato halves with butter or bacon fat will make them softer and give the potato more flavor.
- You can fill all of your potato skins with the amounts of filling to your taste, measurements are just suggestions.
