Homemade Lofthouse Cookies

Does your family love Lofthouse cookies as much as mine? I know we aren’t the only ones who love them because you can’t walk through any grocery store without seeing a huge display of them.  Homemade is so much better though!

These Lofthouse Cookies are surprisingly easy to make and keeping them in your kitchen will make your house the place to be for your kids and their friends! Not only that, but you and the kids will have tons of fun making and frosting them.

Lofthouse Cookies will also be a hit for parties, holidays, bake sales, after-game snacks or just about any other activity you can think of.  You can also personalize Lofthouse cookies by switching up the color of your frosting to match the holiday colors, your kids’ team colors, etc.  They are one of the most versatile desserts out there!

What is a Lofthouse?

FROM LOFTHOUSE TO YOUR HOUSE. Lofthouse Cookies landed on grocery shelves in 1994. Mixed from a family recipe handed down from generation to generation, Lofthouse Cookies quickly became known as that moist and delicious sugar cookie with the sweet fluffy frosting.

WHY IT WORKS

    • Lofthouse cookies are the favorite of many, so you know they will be a hit.
    • You can make them their usual pink color, or you can personalize them to suit your celebration.
  • It’s easy to double the recipe if you are needing a big batch.

RECIPE VARIATIONS

    • Use different food colorings to mix up the look of your Lofthouse Cookies.
  • Top these Lofthouse Cookies with smaller cookies that have been cut with shaped cookie cutters for fun, decorative, double-decker cookies.
  • Be sure to use sprinkles, lots and lots of sprinkles!

  • Pull the cookies out of the oven when you see the edges begin to brown.  You don’t want to over bake them.

WHAT YOU’LL NEED TO MAKE LOFTHOUSE COOKIES

    • 1 ¾ cup all-purpose flour + extra for rolling
    • ¼ tsp baking powder
    • ¼ tsp salt
    • 2 sticks butter, softened and divided
    • 1 large egg
    • ½ cup sugar
    • ½ tsp vanilla extract
    • 2 cups confectioners’ sugar
    • 2-3 tbsp milk
    • Red gel food coloring
  • Rainbow Sprinkles

Yields: 12-15 cookies

HOW TO MAKE LOFTHOUSE COOKIES

Step #1: Sift together flour, baking powder and salt in a medium-sized bowl.

Step #2: Using an electric mixer, beat 1 stick of butter, egg, sugar and vanilla until smooth. Add dry ingredients slow, one third at a time.

PinStep #3: Once the cookie dough is complete, remove from bowl and take ¼ of the batter and wrap in plastic. Wrap the remainder in plastic as well and let both portions sit in the fridge for one hour. Remove from fridge and let sit for five minutes.

Step #4: Line a baking sheet with parchment paper and set aside. Preheat oven to 325 degrees.

Step #5: Roll out bigger portion of cookie dough using your extra flour on your working surface. It should be rolled out to be about ¼ of an inch thick.

PinStep #6: With a 2-inch circular cookie cutter, cut out circles and place on your lined baking sheet, about 1 inch apart from each other.

Step #7: Color the remaining cookie dough (the ¼ portion you wrapped separately) with 2 drops of red gel food coloring and knead until completely tinted. Roll to be ¼ of an inch thick and cut with a small heart-shaped cookie cutter. Place on the same baking sheet, about 1 inch from each other.

Step #8: Bake for 11-14 minutes or until edges are golden brown.

How to Make Buttercream Icing

Beat remaining butter, sugar and milk until smooth and forms stiff peaks. Color with 1 tsp of red gel food coloring and mix on high until completely tinted.

To decorate
Once the cookies are cool, use a piping bag to frost each cookie. Add heart-shaped cookie in the center and top off with sprinkles. Enjoy!
