Turn these cupcakes into a fun party activity. Bake the cupcakes, prepare your frosting, and microwave the candy melts ahead of time, then line them up on a table. Have your guests create their own Minions out of the ladyfingers for a fun cupcake decorating activity.

- Instead of black frosting, you can use a black edible marker for drawing your Minions’ goggles and eyes.
- Instead of using candy eyes, you can use white chocolate chips. These may not, however, lay as flat.
Variations:
- If you don’t have ladyfingers on hand, use marshmallows or Twinkies (cut in half) as a substitute for making your Minions.
- Bake your cupcakes in blue paper baking cups to make it look like the Minions’ jumper.
Minion Cupcakes Ingredients:
- Vanilla cake mix + ingredients to prepare it
- 2 sticks butter, softened
- 4 cups icing sugar
- 2-3 tbsp milk
- 2 drops of blue gel food coloring
- 12 ladyfinger cookies, cut in half
- 3 cups yellow candy melts
- 3 tsp coconut oil
- 20-24 candy eyes
- White decorating frosting
- Silver food dust
- Black decorating frosting
How to make Minion cupcakes:
Prepare vanilla cupcakes according to box’s directions and allow to cool completely.
Using an electric mixer, beat butter, icing sugar and milk on medium and gradually increase the speed to high. These ingredients will make up your buttercream. It is ready once the ingredients are well-combined, smooth, and form stiff peaks. Add blue gel food coloring and mix until completely tinted.
Frost each cupcake with your buttercream.
Line a baking sheet with wax paper. Microwave candy melts and coconut oil in 30-second intervals or, until completely melted. Dip each ladyfinger cookie half into melted candy. Coat completely and gently lay flat on the lined baking sheet. Add 1 or 2 candy eyes on each coated cookie. Allow to set.
Draw “goggles” around your Minions’ eyes with the white frosting. With a paintbrush, gently dab the silver food dust on the “googles.” With the black frosting, draw hair for your Minions.
Insert each Minion into a cupcake and enjoy!
