Variations to Classic Meatloaf Recipe

While this is a classic meatloaf, you can also change things when you want. With this meatloaf recipe you can

  • Add Less Sugar: While the topping of these meatloaf is amazing, if you find it to sweet, just add less sugar.
  • Hidden veggies: This classic meatloaf is a great way to add in some hidden vegetables. To keep them hidden, process them in a food processor.

Ingredients for Meatloaf

  • Ground round
  • Onion
  • Minced garlic
  • Ritz crackers
  • Egg
  • Ketchup
  • Honey Dijon mustard
  • Italian Seasoning
  • Garlic salt
  • Seasoned salt
  • Ground pepper
  • Chili powder
  • Brown sugar
  • Worcestershire sauce
  • Dry mustard
  • Brown sugar

How to Make Meatloaf

Place the ground round in a large bowl, and break it up a little with a large spoon.  Add the finely chopped onion, garlic, Ritz cracker crumbs, egg, ketchup, mustard, Italian seasoning, garlic salt, seasoned salt, fresh ground pepper, chili powder, and brown sugar.  Mix all ingredients until well blended, and completely incorporated.

Butter a loaf pan, and place the meatloaf mixture in the loaf pan, and press into the pan, forming a loaf shape. Set aside.  Line a large dish with foil, and turn the loaf pan out onto the foil in the dish, forming the meatloaf.

Place the dish in the oven at 350 degrees for 45 minutes, and turn the oven up to 400 degrees, and bake another 15 minutes,  or until a meat thermometer reads 160 degrees in the center of the meatloaf.  Meatloaf should be brown on top and sides.   Remove Meatloaf from the oven, and let rest in the pan. 

Make the Topping: in a medium bowl, mix the Ketchup, Worcestershire sauce, dry mustard, and brown sugar until all ingredients are completely blended.  Pour over Meatloaf, and place Meatloaf back in the oven for 5 minutes.  Remove from oven and allow Meatloaf to cool for 15 minutes before cutting to serve. 

After 15 minutes, cut Meatloaf in slices with a sharp knife, serve, and enjoy!

Ingredients

  • 3 pounds ground round

  • 1 Tablespoon honey Dijon mustard
  • 1 Tablespoon Italian seasoning

  • 1 Tablespoon seasoned salt
  • 1 teaspoon fresh ground pepper
  • 1 teaspoon chili powder
  • ¼ cup of brown sugar

MEATLOAF TOPPING

  • 2 cups of Ketchup
  • 2 Tablespoons of Worcestershire sauce
  • 1 teaspoon of dry mustard
  • cup of brown sugar
