This Strawberry salad has a delicious blend of mixed greens, fresh strawberries, cheese and pine nuts. It’s light, healthy, and a simple way to use one of the favorite fruits of summer!
So yesterday I shared with you my Whole Wheat Tortilla Wrap that I’ve been enjoying for lunch. I mentioned that I’ve been eating salads too and have created my own favorite here in my kitchen! It’s a Super Simple Strawberry Salad that even my Husband enjoys….this is true for anyone that knows him!
So I could eat vegetables all day long. I mentioned to the Hubby the other night that I have no issues eating vegetables, it’s fruit that I don’t think I eat enough of. Which I assume is bassakwards from most people.

While I do get tired of eating salads it is all about switching it up every now and then.
The other day I had this Strawberry Salad with chopped egg on it and it was still delicious. The Hubs knew I had been eating them, but, had never tried one for himself until the other night when I made my delicious Pan Seared Salmon {recipe coming tomorrow!}. I threw this salad on the plate and he ate every last bite.
Now I will say that my favorite way to eat this salad is with crumbled goat cheese. If you’ve never had goat cheese it’s super rich and creamy and smooth….oh hell just go get ya some! It’s divine!
You could also add some toasted pine nuts and omit the croutons if you still want a nice bite to the salad, but, I didn’t have any pine nuts and my kids eat croutons like licorice so I’m alright with it.
Simple Strawberry Salad Ingredients
Ingredients
- 2 C Organic Mixed Greens
- 4-6 Organic Strawberries, hulled and quartered
- Sprinkle of Cheese (mozzarella, goat cheese)
- Croutons or Pine Nuts
- Garlic Expressions Dressing
This is pretty intense to put this together. You ready?
Grab a LARGE bowl and toss all the ingredients in. Be sure to drizzle in the Garlic Expressions Dressing very lightly. Some folks like a little more or little less dressing so dress it up how you’d like! Mix together and plate.
This is about the size I make for my lunch. If you want to serve as a side, you can make this amount and split amongst 2-4 people. Just make sure to include enough strawberries so that everyone receives an equal amount. It adds a sweetness to the salad that is simply a little taste of Heaven!
To make the strawberry salad a complete meal, add some protein. It would be delicious with Grilled Honey Chicken.
