There’s some recipes that I make in my kitchen because I need to use ingredients up before they turn bad…this Blueberry French Toast Casserole recipe was just that!
On those cool mornings, I love to get up a little early, sip my coffee in silence (can I get an Amen?!?) and surprise my family with my Blueberry French Toast Casserole recipe. It’s seriously one of the easiest breakfast recipes you’ll ever make, leaves your home smelling oh so delicious and guess what, breakfast is served without a lot of fuss!

What You Need for this Blueberry French Toast Casserole:
Ingredients
- 2 ½ C Milk
- 2 TSP Vanilla
- 4 Eggs
- 1 TBSP Cinnamon
- 1 Pint Blueberries
Topping
- 1 ½ C Brown Sugar
- 4 TBSP Butter
- 2 TSP Flour
- 1 TSP Cinnamon
- ½ TSP Nutmeg
How to Make Blueberry French Toast Casserole In Your Own Home
You guys it doesn’t get much easier than this! Grab a large bowl, a medium bowl, your ingredients and let’s get started!
Variations to Making a Blueberry French Toast Casserole
- Instead of using Blueberries, replace with fruit that is in season and will soften
- Don’t have a ciabatta type loaf of bread? No problem, use sandwich bread cut into fourths
- Cut out the sugar, my omitting the brown sugar topping
- Want to get all crazy? Replace the blueberries with chocolate chip morsels!

Blueberry French Toast Casserole
Ingredients
- 1 Loaf Ciabatta bread any thicker style bread will do, cut into ½" chunks
- 2 ½ C Milk
- 2 TSP Vanilla
- 4 Eggs
- 1 pint blueberries
- 1 TBSP Cinnamon
- 1 ½ C Brown Sugar
- 4 TBSP Butter
- 2 TSP Flour
- 1 TSP Cinnamon
- ½ TSP Nutmeg
Instructions
- You guys it doesn't get much easier than this!
- In a medium bowl mix the milk, vanilla and eggs.
- In a separate bowl mix together cinnamon, brown sugar, cinnamon and nutmeg, whisk until combined.
- Add butter to cinnamon mixture, set aside.
- In a 9x13 baking dish grease it lightly.
- Place bread cubes into dish and pour the milk mixture over the entire dish.
- Sprinkle in blueberries.
- Using clean hands (or a large spoon) mix the milk mixture ensuring every piece of bread is covered. If not it will dry out during baking and will be hard to eat.
- Now you can cover and let sit in the refrigerator over night or you can cook right away.
- You will want to place the cinnamon/sugar mixture on just prior to placing in the oven.
- When are ready to cook place in a 350 degree oven for 25-25 minutes.
