Have you ever been to those fancy schmancy breakfast joints? You know the kind that is just OVER THE TOP crazy breakfast and you only go there for
- Special occasions, or
- When you have a craving for an over-the-top, delicious breakfast or brunch.
Yeah, I have one of those joints too. But since I’ve mastered the art of making my own Blueberry Compote at home, I haven’t been back to that fancy schmancy breakfast place. I mean I enjoy a break from cooking, but, the price are CRAY!
So instead of hitting up one of those breakfast joints, what I’ve been doing is grabbing waffles from my favoritist Chicken and Waffle joint in Cincinnati – Belgium Waffle. Now sometimes I’ll stay and have their yummy chicken and waffles…and their chicken salad is AMAZING too! However, more often than not I walk in and grab a bag of waffles and I’m out!
The next morning I wake up, make a side of protein – you know like BACON. Then I whip up fresh Blueberry Compote in just a few minutes and pop the waffle in the toaster for a minute or two. I top the waffle with blueberry compote and of course, some fresh whipped cream!
And OMG. It’s seriously amazing. I limit myself to just one waffle, but, in reality I could eat the entire bag! Now I would be sick as all hell, but, it would totally be worth it!
Ingredients
- 2 C Frozen Blueberries
- ⅓ C Sugar
- 1 TBSP Vanilla Extract
- 1-2 TSP Lemon Juice
- Zest of 1 Lemon
Instructions
- Combine the blueberries, sugar, lemon zest and lemon juice in a small saucepan.
- Cook over a medium heat for about 10 minutes.
- Add vanilla extract. Cook for 5 minutes more, stirring frequently. Serve warm.
