This Chicken Salad recipe is unlike any other. I’m willing to bet that once you make Crack Chicken Salad, you’ll never make another chicken salad recipe again!
This Chicken Salad Sandwich recipe is inspired by the Crack Chicken Salad from Miami Market. My husband often frequents this establishment in Milford on 131 when he is on test drives! You can also try our crockpot crack chicken recipe!
Listen, I’ll pay for good food for once or twice and then I try and replicate recipes at home, because it’s cheaper and I know exactly what is going into my food. This also assures me I will not find a bug or random piece of hair in my dish….
Anyway. Back to the recipe!
So J introduced me to this crack chicken salad from the market a few years ago as we were wrenching on one of our vehicles on a Saturday afternoon. This was previous to children, when we could do things like this. We were waiting on a part and decided to run up to the Market for this chicken salad he kept ranting and raving about.
What is Crack Chicken?
Crack recipes are ones that supposedly taste so good, one bite can cause an addiction. That being the case, this Best Chicken Salad recipe is called Crack Chicken for a good reason, because it is addicting!
We got back to the shop and I dove in to this crack chicken. It was literally the best chicken salad I’ve ever had. So he would bring me home my crack chicken salad every time he went to the Market. After a few times I decided to try my hand at it, I mean it was really pretty easy to figure out the ingredients.
Ingredients in the Best Chicken Salad Recipe:
There are just a few simple ingredients used to make the best chicken salad. They may be simple, but it is a powerful combination!
- Chicken Breasts
- Chicken Broth
- Green Onion
- Mayonnaise
- Salt and Black Pepper
Now I’m not one to brag, but, I nailed this recipe the first time! {OK, so maybe I like to brag a little} The chicken salad is so good, I didn’t even leave any for J to try. So the second time, I made sure to leave some around so that he knew I meant business and can make the same chicken salad as the Market’s.
What’s the Best Way to Eat Chicken Salad?
Most often, I toast bread and eat the Best Chicken Salad as a sandwich, or use crackers and eat the chicken salad like a dip. It’s whatever you want to do, okay?!? I just want you to enjoy this Heavenly Chicken Salad recipe. 😉

Best Chicken Salad Recipe
Ingredients
- 3-4 Chicken Breasts
- 2 C Chicken Broth
- 3 C Water
- 1 Green Onion
- 4 TBSP Mayo
- 3 TBSP Black Pepper
- Salt to taste
Instructions
- In a large pot place the chicken broth, water and chicken breasts, cook.
- In a food processor (or you can totally chop) chop up the green onion and place in a large bowl.
- Once the chicken has boiled completely, remove and let drain. You want to reserve the water/chicken broth mixture so keep it on the stove!
- Cut the chicken breasts in half and place in the food processor and shred. Place in bowl with green onions.
- In the large bowl pour in mayo and mix with the chicken. Now the chicken salad will be a little dry. This is the time to scoop a TBSP at a time of the water mixture. This helps the chicken not be so dry 😉 I typically do 5-7 TBSP's of water, but you may need more or less depending on how big the chicken breasts are.
- Mix in salt and pepper, chill and serve. There is A LOT of pepper in the crack chicken salad. If you don't want so much pepper add less.

This sounds marvelous. I did think the mayo wouldn’t be enough, but your idea of using some of the broth to moisten the chicken is fantastic. I’m going to make it for a luncheon, and stuff it into halved ripe avocados. I expect compliments!

This is a great blueprint for chicken salad that you can build flavors into.Needs dried cranberries, toasted walnuts, teragon, celery salt, red wine vinegar, celery and sweet onion. Then you’ve got a real copy cat! Enjoy!

Made this for dinner tonight, so good and super easy. I did cut the pepper down and substituted celery for green onion. I split the salad in half and added dried cranberries to half. Both are awesome!
