One kid wants blueberry pancakes, one child wants chocolate chip pancakes and the other child is just happy to have whatever is left over. I’m so glad that my homemade pancake recipe is super versatile and can hold up to so I can have my own blueberry pancakes with Mini Me!
You guys.
Is anyone else just plain worn out by 8 o’clock? I’m just ready to throw some jammies on, grab my blanket {yes, I have a blanket!} and snuggle up with my kids. It is everything that I have in me on most days to even stay up til 8.
People think that just because I’m a SAHM (stay at home Mom) that I have all this free time to do what I want, take a nap when I please, make Chocolate Chip Cookies whenever I want and can jump in the shower on the drop of a dime….well those people are totally WRONG!
On most days the kids and I wake up shortly after the Hubs leaves for work. I give them a few choices on what they can have for breakfast and we go from there. I silently am hoping that the girls say that they want the same thing because that makes for a happy Momma who hasn’t yet had her coffee…
YES! My morning coffee is needed before I can function so please don’t ever call me first thing in the morning cause I’m not going to answer!
K now on mornings that I had a good night sleep I’ll offer to make pancakes…however, it always comes with a catch from the girls. One will want a completely different pancake than the other. IT NEVER FAILS!

Now I don’t believe in using separate bowls for everything when it comes to cooking. It just creates more of a mess for me to clean up and that’s not necessary! So when it comes to making my own pancake recipe I place all the dry ingredients into a bowl and whisk. Then I place all the wet ingredients on top of the dry ingredients and combine just once.
I will also tell you that you can double up this recipe and freeze the leftovers. Then two or three days later you can pop them in the toaster to warm up for a super quick and easy breakfast! You’re welcome 😉
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup Sugar Free Almond milk
- 2 tbsp unsalted butter, melted (or vegetable oil)
- 1 tsp vanilla extract
Instructions
- In a large bowl place flour, sugar, baking powder, cinnamon and salt and whisk until combined.
- Pour in milk, butter and vanilla extra to dry ingredients, mix.
- Using a ⅓ C scoop pancake batter onto a greased griddle or skillet.
- Once you begin to see bubbles form on the top of your pancake flip to the other side and allow to cook for another 3-4 minutes, until golden brown.
- Spread a touch of butter and syrup over the top of your pancake with a handful of blueberries!
