This Fluffy Pancakes recipe is so quick and easy to make, you can have fluffy pancakes ready to eat in 15 minutes! Feel free to make the batter the night before and leave in the fridge. With NO sugar or buttermilk, these are healthier pancakes that everyone will love.

Some of my best recipes are made when my children are involved. All I heard yesterday was “Can we have pancakes for breakfast tomorrow?”.

There are times when I say no, simply because it’s not a “superfood”. However, on a Sunday morning, I’ll more often than not, cave to the request.

I mean they are only little for a short while and I remember making pancakes with Mommy! That’s why I do what I do…for the memories and to teach my children how to feed their bodies with proper nutrition, by cooking at home. It’s a invaluable life lesson that I wish I had growing up.

Fluffy Pancakes Ingredients

This particular Sunday morning the entire house was still asleep. We had watched the ZooKeeper on the Firestick the night before! I made my coffee and got busy gathering the ingredients to make fluffy pancakes.

  • coconut oil
  • unsweetened almond milk
  • eggs
  • unbleached flour
  • cinnamon
  • baking powder
  • salt

As I was gathering all my ingredients, I heard little foot steps tip toe from the hallway. It was my little TT girl. Ever since she turned 5, all she wants to do is be in the kitchen with me. So she jumped up on the chair at the sink, washed her hands, and helped me create this little Fluffy Pancakes recipe video for ya’ll!

While I was cooking the pancakes on the Electric Griddle, she also cut up strawberries and bananas for me. Cutting with her kid-friendly safety knife is probably one of her favorite things to do.

I also am not all “Mother Hen” over her waiting for her to cut her finger off. Instead, she’s gained her independence! {Excuse me while I go cry like a baby in the corner now!}

Now this Fluffy Pancakes recipe is one that I use as a basic pancake recipe. It can stand up to sprinkles, chocolate chips and even blueberries should you wish to add to the pancake batter.

As I’m often a short order cook, I’ll make a few plain for the Hubby, a few chocolate chips for the kids and maybe even a few sprinkles if we are celebrating a birthday or fun day. If I have a fruit on hand that I can toss into the batter I often do that as well and it will get eaten by someone!

What I love the most about this Fluffy Pancakes recipe is that there is NO sugar or buttermilk.

I feel like the chocolate chips or sugar-free syrup have enough sweetness, we don’t need any more!

Recipe Substitutions and Nutrition

Now, if you need a Fluffy Pancakes recipe without eggs, you can totally substitute 1 large mashed banana for the eggs. I’ve done that more times than I can count…

Beanies don’t like it when I make pancakes with bananas, because she doesn’t like them. My aim is to please, people!

Fluffy Pancakes Recipe

Ingredients

  • 4 TBSP Coconut Oil
  • 1 ½ cup plus 2 TBSP Unsweetened Almond Milk
  • 2 large Eggs
  • 2 cup Unbleached Flour sifted
  • ½ TBSP Cinnamon
  • 2 TSP Baking Powder
  • 1 Pinch Salt

Instructions

  • In a large bowl add Coconut Oil, milk and eggs. Stir to Combine.
  • Sift in flour, cinnamon baking powder and salt.
  • Mix together until combined. Be sure not to over mix.
  • Spray a ⅓ C measuring cup with non-stick spray and measure batter out onto a greased (butter, oil, spray) griddle.
  • Cook each pancake until it begins to bubble at the top and flip, cooking another 3-4 minutes until cooked through.
  • Serve with syrup and fresh fruit!
